Engine Fan Problem
I've checked coolant and its all there, likewise the temp gauge is rock solid - no over heating.
Interestingly though I have noticed a clicking coming from the fuse box area under the steering wheel. I am a technical numpty but could it be a relay or something?
Any help appreciated chaps

As above try disconnecting the sensor above the expansion tank. Spray contact cleaner on the plug and socket rather than WD40. WD40 leaves a sticky residue, which attracts crap.

Do you have an F or a TF? looking at your avatar it's a TF.
We need to know what car you have and the year as the fuse layout, relay positions and wiring are totally different between the F & TF, and on the later TF's there is no engine bay temp sensor.
Let us know and we will be able to post the correct info and hopefully resolve your issue.

Its a 1.6 TF registered in 03.
Is the sensor a straight pull off is it clipped in place?

Attached is the correct fuse and relay layout, wiring diagram for the cooling fans and an image of the the position of the engine bay temp sensor.
Press in the wire clip on the sensor plug to release it.

Anyway I've cleaned up the contacts and the fan still comes on whether I have the plug in or out so I guess it must be a faulty sensor. ( that being said I will get another clip as it must help to maintain the contact)

What made it worse was that I was reminded that you don't need to remove the clip to disconnect the plug. You simply press the clip inwards from the side and the plug pulls off.
Good luck finding yours or a replacement.
