At best gauges are to be used as comparators, over time you look for any unusual readings and investigate any potential problems that they may indicate, such as a sudden increase in water temperature or drop in oil pressure ( where an oil pressure gauge is fitted)
OEM gauges are built to a price, so generally, they are rubbish, however, due to the infinite wisdom of MG-Rover's bean-counters, our cars are the exception, in our cars the gauges are exceptionally rubbish!
I'm sure that the oil temp gauge is only there because it was cheaper than something that might actually be useful like an oil pressure, volt or vacuum gauge.
Vacuum gauges are a very good indicator of the mechanical state of an engine if you know how to read them, unfortunately, very few people know how to do this, so they are rarely fitted OEM, and when they are fitted, they are dumbed down to a gimmick "economy" gauge which has no graduations to read, only an economy zone and maybe a power zone.

There was a time period, I cant remembr the dates off hand, where the gauges over read by a worrying factor.The cure was to put a resistor in the signal feed to reduce the reading to a more sensible level.
i fitted a new sensor to my car and the oil temp readings increased by 50c. I got an accurate temp reading infrared meter and took readings from the sump I then added a resistor to bring the gauge reading back to the actual reading.
having said all that, you need to find out what the actual oil temperature is before going any further.
