As I understand it the Pscan assist value should be low with the steering wheel stationary in the straight ahead position. Also the target and observed current values also 0. 

The best I can get is the current target and observed low 0.3a and the assist % low or I can get 0.0 target and 0.1a observed but the assist percentage is over 50%. Photos show both sets.

Please can anybody advise which is the preferable option? I’m going crazy fiddling the sensor  back and forth and don’t want to reassemble until sorted.

I set my EPAS up with a pair of LEDs accross the motor to visually show very small variations in assistance whilst centring the sensor. Although I have a PSACn I didnt use it for this job as the last thing I wanted to do was to have to keep looking away at a screen. LEDs placed right by the sensor made it very easy.

I too have used the twin back to back LED system, to set up the EPAS. So useful did I find it, that I fitted a proprietary Red/Green reversed polarised single package dual LED (a mouth full of a description, only used by pedants!) in the off side air vent. When the steering is dead ahead there is no indication, useful for monitoring any drift with the system. It also helps when aligning the car, whilst reversing into my garage.

my understanding is that the sensor reacts to force rather than position.
Basically (by my understanding) you are looking for the smallest "Target current" when nothing is touching the steering wheel
