I have used the same kit and can agree the polish certainly flicks about. The two units I'm working on are heavily pitted and have decided to hand sand them and eventually machine polish them, however It's still a work in progress.

I tend to use the normal side jack and lift the car then use a bottle jack and with a 4" square wood block from an old pallet jack it up on the subframe until I get the axel stands in.

I have done this both front and rear, a bit of a faff, but it seems to work for me. I know what you mean about the ramps mine are too narrow as well. So I made some wider platforms from wood and attached to the top so at least supports the wheels at the highest point.

Whilst I use a ring spanner and what seems an eternity to get those tricky rascles in, I did see an alternative where the holes were slotted out and Flanged bolts used where the cover was slid in and nipped down rather than remove those screws.

I would say if everything was working fine before, I don't think I'd bother. Whilst I know it's great to have everything spot on, sometimes you can end up creating problems when to just enjoy the car is the prime thing

I quite agree a good solid fixed vice is always a good start, but I think the main point of posting that particular video was that it's not too difficult to replace the bearings even with some crap tools.
I used a similar bearing pusher tool and will no doubt never replace another wheel bearing, so for a one off was an inexpensive choice. A quality set of tools are always a plus doing any job, and throughout my engineering life have never scrimped when it came to building my tool box.
Even now as my work days are behind me, I still have a wish list of tools but I do tend to balance it against how often I will use them.
