In case of MEMS 3 engine bay air temperature sensor is connected to small engine ECU connector pin 71
and bigger engine ECU connectors pinm21 and 37. Same wire goes to pin 37 and above mentioned pin 71
My suggestion would be to check what is connected to these pins (what wire colours, are they just looped, check continuity).

Engine bay air temperature sensor was deleted in mid/second half of 2004 starting from VIN RD 634869 in the same time when low coolant sensor was fitted to expansion tank on MG TF cars. That is my understanding, After a bit of research I'm wondering if my ECU is to early and looking for the AAT sensor, I'm currently unsure if all Pektron cars used the coolant sensor or if some still used the AAT sensor.
Think i read somewhere about the pre cat sensor, but yep doesn't make sense, so probably wrong.
That'll teach me for having right mixed bag of stuff.
MG TF from VIN RD 632424 to RD 634868 had low coolant alarm wiring fitted but no sensor fitted to expansion tank and therefor you would have checking of low coolant alarm triggered but no sensor - action was needed by T4 to electronicaly shut down that check.

One relay operates only one fan. However since you have AC, at place you mentioned you do not have one yellow relay but black box of 4 relays pack together as you can see in this thread:
https://www.the-t-bar.com/forum/roverlike-s-guides/97846-mg-f-tf-fuse-relay-listing
part number YWB100801. In that box you have both relays which operates cooling fan and AC fan.
