My research flags up 2 possible answers: Jabekke in 1951 or
Bonneville in 1952 with a Wolsely engine + a TD engine in the same car.
It will be all right in the end. If it isn't all right yet, then it is not yet the end..

The car I'm referring to ran pre WWII (just) and ran with the same engine each time...

From what I recall, the car ran in three different classes by blanking off cylinders and running in 2, 4 and 6 cylinders modes, rather than reboring, but of course I could be remembering wrong. Certainly set records in 750-1100 and 1101-1500 classes in 1939.

Will now have to think of a question: the downside of victory!

For completeness: the So Cal connection?

"in 2002, MG Rover approached the legendary, California-based, So-Cal Speed Shop to build and run the car. Custom car specialists So-Cal are professional land speed racers, well known for their Bonneville achievements in the late-forties and early-fifties. "
Does this mean I have to do another question now?
