Very close, but it wasn't 1951.

Also my memory seems to recall it wasn't a rebore as such, but that's what the internet does say (and as said, Maintaining the Breed is a long way away at the moment).

1951 was a successful year. He was a master at modding engines for different cc classes: eg modding a 1 litre 4 cyl engine to a 500 cc twin.
My research flags up 2 possible answers: Jabekke in 1951 or
Bonneville in 1952 with a Wolsely engine + a TD engine in the same car.

Yeah Goldie Gardner certainly liked to take as many records in one go as he could...

The car I'm referring to ran pre WWII (just) and ran with the same engine each time...

That's the one! I am pretty sure it was EX135, it had so many configurations over the years, but can't confirm without me book.

From what I recall, the car ran in three different classes by blanking off cylinders and running in 2, 4 and 6 cylinders modes, rather than reboring, but of course I could be remembering wrong. Certainly set records in 750-1100 and 1101-1500 classes in 1939.

Is it... Peter Stevens designed the McLaren F1, which was the world's fastest production car, also designed the MG ZT, and an MG ZT-T 260 with circa 750 hp set the record for the world's fastest estate car at Bonneville (225mph)?
